Karigadubu (Fried Sweet Dumplings)

 It is that time of the year when we make the most sweet items . Shravana Maasa , the first of the four Chaturmasa is considered very auspicious and we perform Pooja to the  Dieties with all our devotion and excitement. Karigadubu means fried kadubu ( sweet dumplings made with Chana dal and Jaggery stuffed in Wheat flour dough and deep fried) . Happy Shravan Somvar to everyone celebrating๐Ÿ˜Š๐Ÿ™๐ŸŽ‰๐ŸŽ‰ We usually fast on all the Shravan Somvaar’s till evening & offer Naivedyam to Lord Shiva at night & break the fast. So Bhagar is one such traditional Maharashtrian fasting  recipe made using barnyard millet that I made yesterday. These laddoos are very easy to make with only 4 ingredients. INGREDIENTS: Wholewheat flour 1 cup Jaggery 3/4 cup Cardomom powder 1 tbsp Ghee 2 tbsp INSTRUCTION:  1.In a pan heat wheat flour with some ghee till it turns aromatic. 2.After it cools down .Grind it with jaggery and cardomom powder. 3. Soft Instant Rava Idly recipe

 This is one breakfast that I make all the time as it requires no prep, can be made in 20 mins and with simple ingredients that we already have on hand.  The recipe is simple .. do give a try and serve with your fav chutney. I made a chutney with beetroot greens and stalks by frying it with a tempering. Basundi using Coconut Sugar

Homemade Basundi/Rich sweetened with Coconut sugar , flavoured with cardamom and nutmeg and garnished with dryfruits. INGREDIENTS: Organic Milk 2 cups Coconut Sugar 1 cup Cardamom powder 1-2 tsp Nutmeg a pinch Sliced almonds for garnishing  INSTRUCTION: 1.Boil organic milk for a good 45 minutes to make it thick and collect the cream . 2. Onion Chutney for Dosa/ Idli

ONION CHUTNEY...North karnataka style prepared by my Mom. It is perfect with dosa ,idly or phaddu. Even with chapati and Jowar bhakri.This is one of the traditional north karnataka chutneys prepared in villages from 80 years. . INGREDIENTS: For Chutney: Oil 1-2 tbsp Urad dal 1 tbsp Tur dal 1 tbsp Peanuts 1/4 cup Dried red chilli 2-3 Tamarind 1 inch Salt to taste Jaggery 2 tbsp Chopped onion 1  For Tempering Oil  2 tsp Mustard seeds 1/2 tsp Jeera 1 tsp Hing 1/2 tsp Turmeric powder 1/2 tsp Curry leaves 3-4  . INSTRUCTION: ๐Ÿ‚In a pan make a tempering /oggarane of oil, urad dal,tur dal , peanut, dried red chilli ,tamarind ,salt ,jaggery add chopped onion .Fry them well. ๐Ÿ‚After it cools down ,Grind in a mixie Jar into chutney consistency. ๐Ÿ‚Top it with a tempering /oggarane of oil, mustard seeds, jeera, hing, turmeric,curry leaves. ๐Ÿ‚ Serve with your favourite Dosa / Idly .
