Karigadubu (Fried Sweet Dumplings)

 It is that time of the year when we make the most sweet items . Shravana Maasa , the first of the four Chaturmasa is considered very auspicious and we perform Pooja to the  Dieties with all our devotion and excitement. Karigadubu means fried kadubu ( sweet dumplings made with Chana dal and Jaggery stuffed in Wheat flour dough and deep fried) . It is a mandatory sweet to make on special occasions like Varamahalakshmi Vratam, Shravan Shukravara Pooja, Shravan Gauri pooja.  Ingredients:  For the stuffing:( Hoorana) Chana Dal 1 cup Toor dal 1/2 cup Jaggery 3/4 -1 cup Cardamom powder  Camphor powder a small pinch For the dough: Wheat flour 1 cup Oil 1 tbsp Sugar 1 tsp Salt a pinch For Sathi : Rice flour 2 tbsp Ghee 1 tbsp For Frying: Oil  INSTRUCTION: 1 Thoroughly wash Chana Dal and Toor dal 3 times and add enough water to that bowl to let the dals soak for 2-3 hours. Vegan Nigerian coconut cookie crisps (GF)

These are super crisp, flavourful and absolutely healthy cookies.Inspired by @kitchenbutterfly's recipe. This is a combination of coconut jam drops, coconut crisps and coconut candy. I have made them healthier by using almond flour instead of APF and coconut sugar instead of refined sugar. I did not have any Jam so made my own with fresh strawberries. A very simple, easy, and healthy summer dessert!Made with just 3 ingredients strawberries ,honey and ice.So smooth and creamy.!😋 I love strawberries and can eat it in any form.This is one of the easiest ways of enjoying this beautiful fruit.  We have been enjoying these summer frozen treats so much. All thanks to this hot weather! INGREDIENTS: Strawberries 15-20 Honey / Maple syrup 1/4 cup ( as per sweetness required) Ice 5-6 cubes INSTRUCTION: 1.Just add frozen strawberries, honey/maple syrup and ice in a blender , blend into a Coarse paste . 2.Pour into Glass cups and garnish with strawberries and serve😉

Mason Jar Cherry Crumble (V,GF)

These individual cherry crumble mason jars are one of the easiest bakes, juicy cherries with a topping of Oats and a secret ingredient which is like a twist and made so much healthier.. Perfect for kids and elders too to grab their own cup and relish it peacefully. Inspired by this healthy recipe from @simplyquinoa, I had to bake these and they were all gone soon after they came out of the oven and got clicked 😀😉 INSTRUCTION: For the cherries Cherries (fresh/frozen) 1 1/2 cup pits removed Coconut sugar 2 tbsp Tapioca starch 2 tbsp Cinnamon Powder 1/2 tsp Vanilla extract 1/4 tsp For the topping. Vegan Mac n cheese (stove top) using quinoa macaroni

 Vegan Mac n cheese (stove top) using quinoa macaroni I thought of making a simplified quick stove top version of Mac and cheese using @andean.dream quinoa macaronis , broccoli, @primalkitchenfoods vegan mayo and @violife_foods vegan cheese. We love pasta and always find a way to eat it 😀 So here comes my not so authentic mac n cheese version yet super flavourful🙌 INGREDIENTS: Quinoa Macaroni 1 pack Onion 1/2 chopped Broccoli florets 1 and 1/2 cups blanched Olive oil 1 tbsp Vegan cheese slices/shreds 1 cup Vegan Mayonnaise 1/2 cup Garlic powder 1 tbsp Onion powder 1 tbsp Salt to taste Coriander leaves finely chopped. This aromatic fennel gingerbread bundt cake is going to be your favorite festive cake as it is not only delicious but also super healthy. Usually, Gingerbread cake consists of molasses but since I did not have any in hand I tried to make this with date syrup. If you have molasses you can replace 1/4 cup of date syrup in the recipe with molasses.
