Baked Cranberry-Coconut-Jaggery wholewheat Gujiyas🎊🎉
Happy Holi to everyone celebrating!! These baked Karanjis became our delicious holi treat. I thought of stuffing them with something different. I had these dried cranberries in my Fridge. So I came up with this idea of dried cranberries, jaggery, and desiccated coconuts along with some thandai powder. They were super delicious crispy and gone in no time.!!😅
Recipe: (Makes 10-12 gujiyas)
↪Making the whole wheat dough:
Take 1 cup whole wheat flour, 2 tbsp ghee, 1 tsp coconut sugar, 1/4 tsp salt. Make a stiff dough using warm water as required. Keep aside.
↪Making the stuffing:
In a blender, add 1/3 cup dried cranberries, 3/4 cup Jaggery powder, 3/4 cup dedicated coconut 1 tbsp homemade thandai powder, 1/2tbsp cardamom powder. Blend into a sticky paste. Keep aside.
↪Preheat Oven at 390 degrees F
↪ On parchment paper, Roll a small portion of the dough into a big circle. Using a large cookie cutter, cut out the circles, place a lemon-sized stuffing in the center, apply some water on the edges. Fold and shape them into gujiyas. Continue with the remaining dough and make gujiyas. Place them on a baking tray.
↪Bake them for 20-25 minutes till they turn light brown.
Keep them inside for 5 more minutes for crispier karanjis.
