Karigadubu (Fried Sweet Dumplings)

 It is that time of the year when we make the most sweet items . Shravana Maasa , the first of the four Chaturmasa is considered very auspicious and we perform Pooja to the  Dieties with all our devotion and excitement. Karigadubu means fried kadubu ( sweet dumplings made with Chana dal and Jaggery stuffed in Wheat flour dough and deep fried) . It is a mandatory sweet to make on special occasions like Varamahalakshmi Vratam, Shravan Shukravara Pooja, Shravan Gauri pooja.  Ingredients:  For the stuffing:( Hoorana) Chana Dal 1 cup Toor dal 1/2 cup Jaggery 3/4 -1 cup Cardamom powder  Camphor powder a small pinch For the dough: Wheat flour 1 cup Oil 1 tbsp Sugar 1 tsp Salt a pinch For Sathi : Rice flour 2 tbsp Ghee 1 tbsp For Frying: Oil  INSTRUCTION: 1 Thoroughly wash Chana Dal and Toor dal 3 times and add enough water to that bowl to let the dals soak for 2-3 hours. Healthy Beetroot Greens and Stalks Chutney

Ever wondered you can make a chutney with beetroot greens and stalks chutney?? Yes it turns out delicious and is a healthy addition to your diet as the greens and stalks are filled with nutritions. 

Never waste greens and stalks if they are fresh and just convert them into a flavourful chutney like this recipe that I tried. Hope you all will try and make this amazing chutney . 

Best out of the thing which is usually ignored and thrown away in the dust bin is the concept here. 



INGREDIENTS:

Oil 1 tbsp

Jeera 1 tsp

Chana Dal 1 tsp

Urad dal 1 tsp

Methi seeds 1/2 tsp

Sesame seeds 1 tsp

Asafoetida a pinch

Green chilli 1 chopped

Beetroot greens 1 cup

Stalks 5-6

Jaggery 1 tsp

Salt to taste


For tempering:

Oil 1 tsp

Mustard seeds 1/2 tsp

Jeera 1/2 tsp

Asafoetida a pinch

Turmeric powder 1/2 tsp (optional)


INSTRUCTION:

☘Heat a pan add 1 tbsp oil,1 tsp jeera, chana dal, urad dal,methi seeds ,sesame seeds, Asfoetida ,1 chopped green chilly, washed and chopped beetroot greens and stalks...Saute well for 2 to 3 minutes.

☘Transfer to a Grinder jar after it cools down. 

πŸ€Add 1tsp jaggery, salt,.Grind it till you get smooth consistency.

☘Make a tadka by adding oil in a small tempering pan, heat it and add mustards seeds, jeera, hing, turmeric powder … Off the flame . 

πŸ€ Pour it over the chutney and mix well. 

πŸ€ Serve with dosa/ Idly / chapati.

πŸ€ Store in a refridgerator after every serving.

Huli Pudi is one of the authentic traditional Sambar powders which has been passed on from generation to generation. This is specially made in North Karnataka. There is a wide variety of sambar powders not only within Karnataka but within South India. Each region has it's own way of adding ingredients and making them. In North Karnataka brahmin families, you can usually see two types of Sambars, firstly 'Saaru ' which can also be called Rasam with Toor dal. The consistency is thin and usually made with Tur dal and tomatoes or Tamarind. The other one is 'Huli' which is thicker in consistency and usually includes some veggies or greens.
