Thandai flavoured Daliya Kheer

Holi Special šŸŽØThandai Daliya Kheer  ( Vegan, Refined sugar free)šŸŽ‰ Why not indulge in a healthy thandai flavoured daliya kheer which is not only fibre rich but absolutely nourishing and guiltfree. I have added some fruits and dried roses to make a colourful holi dessert.Do try this for a quick healthy treat..šŸ“Œ For Thandai Masala šŸ’œ Almonds 2 tbsp šŸ§” Dried Roses 4-5 šŸ’š Black peppercorns 6-8 šŸ’› poppy seeds 1 tbsp šŸ’“ Cardamom 4-5 ❤ Saffron a pinch For Kheer šŸ”–Almond milk 21/2 cups šŸ”–Daliya/Broken wheat 5 tbsp šŸ”–Maple syrup 1/4 cup šŸ”–Thandai masala powder 2tsp šŸ·Make a powder of the ingredients given under Thandai masala to make thandai powder. šŸ· Heat a pan, add almond milk, daliya, maple syrup , stir and cook well for  30 mins on low flame with lid closed. Serve immediately and decorate with colourful fruits

Vegan Nigerian coconut cookie crisps (GF)



These are super crisp, flavourful and absolutely healthy cookies.Inspired by @kitchenbutterfly's recipe. This is a combination of coconut jam drops, coconut crisps and coconut candy. I have made them healthier by using almond flour instead of APF and coconut sugar instead of refined sugar. I did not have any Jam so made my own with fresh strawberries.



INGREDIENTS:

Almond flour 11/2 cup

Dessicated coconut (med) 1 cup

Coconut sugar 1/2 cup

Baking powder 3/4 tsp

Salt a pinch

coconut oil 2 tbsp

coconut extract 1 tbsp combined with 2 tbsp water

Strawberry jam


INSTRUCTION:

šŸ„„ Preheat Oven at 350 degree F

šŸ„„In a bowl, add flour, dessicated coconut,coconut sugar, baking powder and salt.Mix well.

šŸ„„In another bowl,Whisk coconut oil and coconut extract water mixture and pour into dry ingredients.

šŸ„„Make a smooth soft dough.If too soft , add more flour.

šŸ„„Split the dough into half and roll thinly between 2 parchment paper.Cut the sides to make a it a square shape.Cut horizontally and vertically to make squares.Transfer the parchment paper gently onto a baking sheet.Repeat with the other half and transfer to another baking tray.

šŸ„„ Bake for 10-12 minutes till they are firm. Cool on a rack and then gently take out the square cookies.

šŸ„„Place 1/2 tsp jam on top of the cookies and devour.

Karigadubu (Fried Sweet Dumplings)

 It is that time of the year when we make the most sweet items . Shravana Maasa , the first of the four Chaturmasa is considered very auspicious and we perform Pooja to the  Dieties with all our devotion and excitement. Karigadubu means fried kadubu ( sweet dumplings made with Chana dal and Jaggery stuffed in Wheat flour dough and deep fried) .
