Pancharatna Dal Khichdi Recipe

Panchratna dal Khichdi in my Instant pot. I love one pot dishes...and this dish has the nutrition of 5 lentils, rice and veggies.It is quick as well as satisfying. I guess I invented this recipe in my kitchen...๐Ÿ˜‹ Please let me know if you make this too☺ INGREDIENTS: Ghee 1-2 tbsp Cumin seeds 1 tsp Ginger grated 1 tsp Onions chopped 1 Turmeric powder 1 tsp Vegetables like carrot , peas (optional) Pancharatna Dal 1 cup 11/2 cup Rice  Water 7-8 cups Coriander powder 1 tsp Garam masala 1 tsp Salt to taste  Jaggery 1 tsp Tamarind soaked in water 1 inch  Red chilli powder 1-2 tsp INSTRUCTION: 1.On Saute mode in an Instant pot add Ghee, jeera, grated ginger, chopped onions ,turmeric and saute well.(You can add any vegetables you want) 2.Wash and add 1 cup Pancharatna dal and 1 and 1/2 cup rice and stir well. 3.Add 7 to 8 cups water ,coriander powder, garam masala, salt,jaggery,soaked tamarind,red chilli powder and stir well. 4.Cook for 12 to 15 minutes on cook mode.Add water according to the

Grilled Pesto Tofu Veggie Skewers ๐Ÿข




 What else can be more perfect than grilling some of our fav ingredients like Tofu , Brussel sprouts, cherry tomatoes, bell peppers & Zucchini all marinated in a simple pesto sauce.  Believe me this vegan marination tastes heavenly ๐Ÿ˜€ Super easy if you have some pesto in hand.

INGREDIENTS:
Tofu 1 block cut in cubes
Red bell pepper 1 cut in small squares 
Brussel sprouts 5-8 
Cherry tomatoes 10-12
Green Bell peppers 1 cut in small squares
Zucchini 1 sliced 
Pesto (homemade / storebought) 1 cup
Oil for grilling

INSTRUCTION: 
1.If you're using wooden skewers, soak them in water for about 30 minutes to prevent them from burning.

2.Wash and prepare your vegetables by cutting them into chunks or slices, making sure they're all roughly the same size for even cooking.

3.Dice Tofu into cubes.

4.In a big bowl, take 1 cup of pesto, add in all the veggies and tofu. 

5.Stir gently to coat them with the marinade.

6.Keep aside in the Fridge for 1/2 an hour. 

7.Thread the vegetables and tofu onto the skewers, alternating the types to create colorful skewers.

8.Brush the skewers with olive oil and sprinkle with salt, pepper, and any other desired herbs or spices.

 9.Place the skewers on a tava / Grilling pan.Grill the skewers for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.

10.Serve hot as a side dish or main course. Enjoy your veggie skewers!

If you are making pesto at home:

For a quick pesto recipe, combine 2 cups of fresh basil leaves, 1/2 cup of grated Parmesan cheese, 1/2 cup of extra virgin olive oil, 1/3 cup of pine nuts or walnuts, and 3 minced garlic cloves in a food processor. Pulse until the mixture is smooth, adding more olive oil if needed for consistency. Season with salt and pepper to taste. Transfer to a jar and refrigerate for later use, or use immediately to make these yummy vehgie skewers .

Huli Pudi is one of the authentic traditional Sambar powders which has been passed on from generation to generation. This is specially made in North Karnataka. There is a wide variety of sambar powders not only within Karnataka but within South India. Each region has it's own way of adding ingredients and making them. In North Karnataka brahmin families, you can usually see two types of Sambars, firstly 'Saaru ' which can also be called Rasam with Toor dal. The consistency is thin and usually made with Tur dal and tomatoes or Tamarind. The other one is 'Huli' which is thicker in consistency and usually includes some veggies or greens.
